If you're using JSWED2 then you can change the music at any point.
Like this:

1. Set the game format to +3DOS.
2. Save the game into an empty directory. All the files which make up
the game are now separated out.
3. Replace (or edit) the .TUN files.
4. Load the game back into JSWED2.
5. Set its format back to .TAP.
