Okay, that wasn't my final thought on the matter.  I've just picked up this point from the Party Willy readme file:
> After initially trying separate routines to mirror bidirectional and unidirectional HG sprite-pages, I decided to use the bidirectional routine for all horizontal sprite-pages, toggling the start-sprite between 0 and 4 for unidirectional HGs. This handles almost all HGs properly, even the `disrespectful' monk in The Chapel! > A corollary of this decision is that I had to swap the two halves of not only horizontal sprite-pages, but also vertical sprite-pages, since some sprite-pages mix horizontal and vertical sprites. This handles almost all VGs correctly, a notable exception occurring in The Kitchen diptych (to fix this would involve fiddling with individual sprites and the animation-mask, which I /may/ still get around to in the future).

With regard to the comment in bold, all it actually requires is to change the Base Sprite for each guardian instance in both Kitchen rooms, so that it selects the pair of Andre the Chef sprite-frames, rather than the pair of Wobbling Jelly frames.  No need to swap the positions of the sprites on their page any further than has already been done, or to edit the animation-mask settings for the guardians.
(This appears to have been done with no problem in relation to the various components of the Evil Priest from 'Entrance to Hades' etc, and the vertical Skull guardians (the Ballroom diptych, etc), which involves a very similar process.  That being the case, I'm surprised that the Kitchen guardians appeared to present any additional complexity?)
